Dumb Cooking : Kek Tapai Ubi

When my girlfriend Nik kata dia nak kasi Tapai Ubi for my recent gathering , I terus teringat that I've once eaten Kek Tapai Ubi like 7 years ago at a friend's house. She's a Sarawakian. I dah lost touch dengan dia,,,,,kalau tidak boleh call & ask her of the actual recipe. I didn't ask my friend back then of the recipe coz *hello!* am so not interested in baking. Cuma lately ni I've develop a bit of interest in baking. Back to the kek tapai , I remembered my friend only told me that she uses condensed milk & tepung sikit je. That's all. Hmmmm......how on earth a non-baker like myself will be able to bake a cake.........over creative pulak tu,,,,,ada hati nak bake Kek Tapai Ubi lagi. Kek biasa pun tak pernah buat seumur hidup......

I googled the net for Kek Tapai Ubi recipes , memang ada tapi tak de pulak yang sebut guna susu pekat. Ada I jumpa 1 recipe yang guna susu pekat tapi cuma guna 2-3 sudu besar je , something like that lah.......hmmmm.......semangat berkobar-kobar nak buat jugak kek tapai ni. SO,,,,,,without further ado..........gua akan belasah aje......tengok apa jadi. Boleh makan ke tak,,,,pening kepala ke tak dek kek tapai I ni.....hehehe!

Note note note..........I have never baked anything in my entire life! This is my first try. Bare with me......


Nik kasi 2 bekas tapai ubi,,,,,,other ingredients yang I guna,,,,,,tepung naik sendiri - eggs - butter *Golden Churn is always my choice* - vanilla essence - sugar - susu pekat.


Here goes my pandai-pandai or dumb & dumber way of mixing the ingredients. Firstly I don't have proper baking tools & equipments. No electric mixer , no spatula , no baking bowl.......best of all........I don't even have an oven! Hmmmm......cam ne tuh???? Just go along........

Sukatan macam mana pulak? I remembered my late grandma dulu kalau buat kuih loyang , dia sukat pakai mangkuk. So I did the same........I ambil 1 mangkuk & cracked eggs into it. Mangkuk tu dapat accommodate 6 biji telur je. Great. In goes 6 eggs in a big bowl. Then I letak 1 bar of butter *dah lembik butter tu sebab I left it at room temperature for few hours*. Kacau , kacau , kacau........& add 1 teaspoon of vanilla essence.


Then in goes 1 mangkuk of self raising flour & 3/4 mangkuk gula halus.....not gula pasir. Kacau kacau lagi........I gasak kacau dengan sudu makan jek....hehehe!

Then in goes 1 can of condensed milk.........yesssss.......1 can,,,,,,sebab tu gula I letak 3/4 mangkuk je sebab nak letak susu pekat lagi. Mix till it's smooth *as smooth as I can laa since tak de electric mixer*


Set the mixture aside for a while............now mash tapai ubi. Buang urat-urat yang kasar, ubi yang keras & empulur tengah........use your hands & ramas-ramas the tapai! Dapatkan 2 mangkuk. Then add the mashed tapai to the cake mixture. Mix well.


Put tapai batter in a baking bowl.......just half way......


Not having an oven is not a problem , I bake my tapai cake in a microwave. On high for 30-45 minutes depending on the moisture of the tapai ubi used. Kalau boleh jangan letak air tapai .....boleh kalau nak letak sikit for flavouring but kena pantau banyak kali & takes alonger time to bake.


Bila dah masak.....let it cool for a while before turning over the cake onto a plate.


I made 2 cakes. 1 tebal , 1 nipis sikit. Yang nipis tu I letak batter tu dalam 1 inch and a half , set microwave to high and cook for 20 minutes. It will turn out to be a dense cake not those fluffy ones.

Up till today , I've baked 4 tapai ubi cakes and it all turn out well and good to eat.

The verdict. Yna loves it. I love it and my non-tapai eater partner pun boleh makan the cake without complain. Hmmmm.........OK laa tu kannnnnnn.


A note for me : Nak try buat Cheese Cake pulak lah hehehe....*wink*

  4. Rima, so surprise la tngk u buat kek tapai...i mmg minat mkn tapai tpi x tau lak tapai blh buat kek...ni nk kna cuba nih!...dlm microwave pun menjadik gak kan...bery de cleber lah u..:)
