Long Overdue : Dumb Cooking - Laksa Johor

Yna teringin nak makan Laksa Johor. The last time she ate was during Syawal this year masa I pergi rumah my neighbour Noor. I sendiri tak pernah buat Laksa Johor and this will be my first attempt of doing it. But peeps , with me.........it'll be the super fast version of Laksa Johor laa.....don't expect to see me spend the whole day mengolah Laksa Johor macam my late MIL. It will take her ages preparing the meal but mine..........1 hour tops! Hehehe......The taste? MP will be the judge of it because he has high expectations when it comes to Laksa Johor. Tak kira lah siapa yang masak tapi kalau suruh dia jamah mesti story of how his mom were to prepare it will come out.

MP speaks highly of the way his mom were to cook Laksa Johor. Using only the finest ingredients & etc. But it's very true. I mula kenal Laksa Johor bila I kenal MP. Selalunya I dengar je tapi tak pernah rasa. The first time I rasa Laksa Johor my then MIL to be.....OMG! It was so so delicious. She uses Ikan Parang all the way! Mana tak sedap. Kalau kuah tu satu periuk besar.........it's all ikan parang , tak de tipu-tipu campur dengan ikan lain. I remembered once , masa tu my BIL Kadir nak buat makan-makan kat rumah dia for 1000 pax. He requested for my MIL to make her Laksa Johor......haaa kau......sampai sakit-sakit pinggang maid-maid my BIL dok asingkan isi ikan parang rebus dari tulang-tulang ikan parang yang banyak tak hengat tuh! Tapi.....seriously , she makes the best Laksa Johor that I've ever taste.


I buat Laksa Johor ni lepas I balik dari Ampang Puteri bawak Adriel jumpa Dr. Nasir hari tu. Hmmmmmm........overdue gilerrr. So,,,,,,,,my speedy version.......guna ikan kembong rebus yang beli kat Giant! Jauh panggang dari api laa kalau nak compare to my MIL's......hehehe! Tapi , am making the Laksa Johor today with love. I was so happy today & so much in love. So , I was very positive that my Laksa Johor will turn out great. I honestly don't know the sukatan or the proper ingredients & what nots. I main agak-agak & ingat-ingat lupa apa nak letak in the gravy............mampos laa aku....hahahha! Belasah time! Asingkan isi ikan , I guna 8 ekor kembong rebus.......I beli tadi 2 plate je kembong rebus tu pun. Then I campurkan dengan segenggam udang kering. I remembered my MIL kata kena guna ikan kurau asin kering.........hmmmm......I belasah pakai ikan kurau asin yang dalam botol tu je......hehehe! I guna 3 keping. Entah laa cukup ke tak......like I said.........BE-LA-SAH! In the meantime jangan lupa celurkan spaghetti. Kang kuah dah siap , nak kena tunggu another 12-15 minutes for the spaghetti to cook. Potong stim je......


I masukkan isi ikan kembong - kurau asin - udang kering dalam blender. Zappppp! Dah halus.....siapa pulak yang nak menumbuk isi ikan tu......Mintak maap! Then I blender-kan another batch of fishy mixture tapi kali ni I masukkan sekali 2 batang serai & 10 biji cili kering. Tuang semua dalam periuk.......& heat on......hmmmm.......pucat kan.......tunggu!!!!!


Being the genius that I am.....kah!kah!kah! I cheated of course. I used 6 box of instant Laksa Johor paste by Sunbeam. It has the complete Laksa Johor ingredients in it so I poured the paste together into the pot with my kembong mixture , added sebungkus serbuk rempah kari ikan & serbuk cili and.............mix mix mix 'em well. Simmer kejap.


Bila dah mendidih , I masukkan segenggam daun kesum , 1 small asam keping & 2 kotak santan. Then in goes some salt & sugar.........lots of sugar. I remembered my MIL's Laksa Johor has a sweet taste to it to balance up with the rasa masin from udang kering & kurau asin tu.


While waiting for my gravy to cook.......I made sambal belacan. Pakai blender jugak. Tak kuasa nak tumbuk-tumbuk.


The accompaniments , daun selasih tak de kat Giant so I substitute dengan daun kesum , bawang. I cuba laa nak potong timun macam cara my MIL......gulung-gulung timun tu then hiris nipis-nipis.......I buat satu round je.....then sekian. Potong ikut suka I je , janji nipis & buang pulur tengah timun tu. I suruh Yna siang ekor taugeh *since 3 tekak je yang nak makan , I ikutkan laa cara orang Johor buat......duhhh! Kalau ramai yang nak makan.........Assalamualaikum laa jawabnya....hehehe!* , adalah dalam 20 taugeh yang si Yna siang then dia kata tak larat. Bertuah punye budak. Then I ada beli lobak asin cincang kat Giant tadi. Selamat.........tak payah laa I cincang lobak asin tu. Also some limau kasturi for the sambal belacan.


The moment of truth! Tasting time. Yna dah tak sabar nak makan my Laksa Johor. When she tasted , she said it was good. Alhamdulillah , lepas dah sorang. Tunggu MP balik kerja nak suruh dia rasa. Sementara tu , I makan sepinggan........it was fine with me just how I remembered what Laksa Johor should taste like :-) , Sure MP terperanjat lah bila dia rasa........Terperanjat beruk.........hahaha!

When MP came back , I told him that I made Laksa Johor. You should see the expression on his face.......dia tengok I macam........Hahhhh! Ye la tu I boleh buat Laksa Johor! Seriously , he was sceptical , his face was showing doubt like there's no freakin' way I can make Laksa Johor........tak salah dia laaa........memang ni first time in my life pun I cuba buat Laksa Johor. Tambah pulak MP tau how difficult late mother dia nak prepare Laksa Johor so , he can't believe that I just told him that I made Laksa Johor............*dia tak tahu ke partner dia ni bijak.....bijak menipu dalam masakan......hehehe!* Lagi kelakar bila I tanya dia , "Nak rasa tak?" Dia tengok muka I lagi......disbelief sangat.......hahaha! Muka dia macam tak termakan Laksa Johor yang I buat ni. He was so reluctant more of masih tak percaya.......takut rasa Laksa Johor I nanti macam siol ke apa.....hahaha! So funny.

I know his taste in Laksa Johor.......so am not worried at all. He'll like it. I pun bawak naik atas kat dia sepinggan. Jeng! Jeng! Jeng! Dia ambil pinggan laksa and dok belek-belek & gaul-gaul laksa tu.......tak makan lagi........hahaha! I left him alone coz....alah.....ego pun sama jugak , kang kalau OK.....dia memang payah nak puji. I pergi solat Asar & tinggalkan MP dengan Laksa Johor itu.......hehehhe!

Lepas solat , I tengok dia dah habis makan. Tanya dia , how was my Laksa Johor.........tahu apa dia kata......."ada I complaint?" Orang tanya dia soalan dia jawab dengan soalan balik.....Alahhhh.....OK laa tu.......he will never give me credit. Tapi sik kisah laa aku , nang aku tau Laksa aku tok OK bah.....

When night comes........Yna had some laksa for dinner. Then dalam pukul 11 malam cam tu , MP kata dia lapar. Told him I tak masak benda lain , kalau nak makan Laksa Johor , ade laah.......Dia suruh I ambilkan sepinggan. I saja tanya dia lagi.....OK tak my laksa....nak kasi orang rasa lepas tak?.........baru laa MP cakap OK. Hii........kena berpusing & guna otak tanya dia soalan baru laaa I dapat dengar jawapan OK dari MP. Just an OK. A simple OK. He only gave me 1 perkataan , OK. Hahhhhhhhh,,,,,,,,,,,,OK pun OK lah!

The next day........I panaskan kuah Laksa Johor lagi............Yna nak repeat makan laksa lagi. MP balik kerja hari dia terus tanya if laksa ada lagi ke tak? I cakap ada......tapi kena celur spaghetti lagi kalau dia nak makan......he said OK , dia nak makan. Cuma dia ingatkan I suruh tambah air panas to the gravy takut pekat sangat........dia langsung tak bukak cerita if the taste of my kuah laksa tak sama macam yang arwah mak dia buat & what nots. Ni first time dia tak compare ANY Laksa Johor with his mom's Laksa Johor. Selalunya , even kalau makan kat kedai.....lepas satu suap dia dah comment....."tak sama macam yang my mom buat".......

At least I know MP suka makan Laksa Johor yang I buat tu. I tak cakap laksa yang I buat sama macam yang mak MP buat tapi we just have to be smart in cooking. I believe in enhancing the ingredients when we use instant pastes or sauces , it'll turn out better. The next best thing to his mom's Laksa Johor.....OK laa tu.

Moral of this whole post : If a dumb cook like me can make Laksa Johor.......and tasted good.......hmmmmm........then anyone can freakin' do it. I love food so take my word that be it instant or not......it is good to eat. Ada Laksa Pahang tak? Kalau ada nak belajorrrrr.....Hehehe! *wink*

  1. Ada laksa Pahang Kak Rima, org panggil Laksa Kebuk. It is more like Laksa Johor. The gravy using kuah lemak tapi tak tahu lah apa ingredient dalam dia yang berbeza(sbb tak reti masak). But the noodle buat sendiri but it looks like spaghetti and dia orang makan the laksa dengan tangan. huhuu

  2. Erin....seriously ada? sebab tak pernah dengar. Perlis, Penang, Kedah, Kelantan , Sarawak , Johor....memang selalu dengar.....nak kena google resepi laa ni. Family MP pun makan laksa johor dengan tangan maca makan nasik.....first tengok cam ngeri je.....hehehe! thanx for sharing babe.

  5. I hantu laksa Johor bila I baca you boleh buat dumb cooking I pun cam skeptical sebab ingat betapa seksanya tiap raya kena separate the isi fr the tulang. dah la kalau taugeh berkilo kena petik satu2 grrrr tok I ni amatlah teliti!

    Kudos to you! there is hope for me to cook laksa one day! mana u beli the paste? giant? carefour?

    btw yg rasa manis tu nyiur gula ie...kelapa parut putih only yg di goreng dry then di blend..ai rasa its the same as kerisik..

  7. Kak Rima tak pernah dgr ke Laksa Pahang? Me org Pekan jati and mmg sokmo mkn laksa Pahang. Asal raya jek, mmg sokmo la mak buat laksa Pahang. The noodles tuh actually kena buat sendiri yg tuh la org panggil laksa kebuk tuh. Kebuk tuh kalu tak silap nama alat buat laksa tuh. Tp my mom pakai spagheti jek sbb senang and mudah nak beli. Mmg mostly org Pahang mkn laksa Pahang dgn tangan. More authentic gitu. Hahaha... However, me myself jarang sgt mkn laksa camtu sbb as for me mcm payah. Org2 tua yg sokmo pakai tgn. Bab taugeh tuh kena buang ekor tuh, buang tulang ikan & tumikan, mmg itulah ritulnya tiap kali nk mkn laksa.. Hahaha... The recipe? Never ask my mom sbb mcm leceh jek prosesnyaso tak interested nk ambik tau. Tau mkn jek! Hahaha...
